Rafi’s Spicebox Golden Pumpkin Curry (med)

Serves 4-6



Cut 500g pumpkin into cubes and sprinkle with salt and a drizzle of oil. Roast in the oven until golden and tender. Gently heat 2tbsp oil in a large frying pan or wok and fry the contents of the pack for 3-4 minutes. Add 1 finely sliced onion and fry till soft. Stir in the pumpkin and fry for a further 1-2 minutes. Reduce the heat and pour in 200ml coconut milk. Cook uncovered for 2-3 minutes or till pumpkin starts to become a little mushy. Adjust salt, Serve hot.
